Chicken with tzatziki recipe

Ingredients

500g Greek-style yogurt
1 tablespoon lemon thyme leaves
2 teaspoons paprika
1 teaspoon chilli flakes
1 tablespoon olive oil
6 chicken breast fillets, trimmed
1 small garlic clove, crushed
¼cup chopped mint
2 green onions (shallots), finely chopped
rocket, grilled truss tomatoes, to serve

Preparation

Line a sieve with paper towel. Strain yogurt, stand over sieve for 30 minutes.

Preheat barbecue on high. Combine lemon thyme, paprika, chilli flakes and oil in a large bowl. Season to taste. Add chicken and turn to coat.

Combine yogurt, garlic, mint and green onion in a bowl. Season to taste.

Cook chicken breasts for 4 minutes each side, until browned and cooked through. Serve with tzatziki, rocket and tomatoes.
