Potato galettes with a walnut and blue cheese salad recipe

I prefer to use Roquefort cheese but most blue cheeses would work well. I have cooked the galettes in a small black iron pan but you could also use a non-stick pan.

Ingredients

1 clove garlic, finely chopped
Salt and freshly ground pepper
1 tbsp red wine vinegar
3 tbsp olive oil
About 2 cups of mixed green leaves
About 60 g Roquefort cheese, broken into small pieces
The flesh of 4 walnuts
2 medium potatoes
2 tbsp chopped parsley
2 tbsp duck fat

Preparation

Place half the garlic, a little salt and pepper and the vinegar in a bowl and mix well. Mix in oil bit by bit. Add green leaves, cheese and walnuts and toss gently.

Grate peeled potatoes onto a plate and pat dry with kitchen paper. Place potatoes in a bowl with remaining garlic, chopped parsley and salt and pepper and mix well.

Heat a little duck fat in a pan and, when hot, add grated potato to a 1 cm thickness. Press with the back of a spoon or fork to flatten the potato and cook for a few minutes. Turn galette over and cook the second side. Keep the cooked galettes warm when all have been cooked.

Serve galettes on hot plates with a little mixed salad.
