Chocolate and hazelnut cookies recipe

Ingredients

100g soft butter
½ cup icing sugar
1 egg yolk
½ teaspoon vanilla essence
1 cup plain flour, sifted
¼ cup cocoa
¼ cup hazelnut spread
2 tablespoons hazelnuts, finely chopped

Preparation

Mix butter, icing sugar, yolk and vanilla until smooth. Add flour and cocoa and process in a blender until the mixture is a soft dough. Wrap dough in plastic and refrigerate for 40 minutes.

Preheat oven to 180°C and line two baking trays with baking paper. Roll heaped teaspoons of dough into balls and place on prepared trays. Squash balls into rounds using a fork. Bake for about 20 minutes, or until firm, then cool on wire racks.

Spread a little hazelnut spread on to the flat side of each cookie. Sprinkle half with hazelnuts and place remaining cookies on top.
