Mud cakes recipe

Ingredients

175g dark chocolate melts
150g butter
½ cup self-raising flour
½ cup cocoa powder
¾ cup caster sugar
3 eggs, lightly beaten
ICING:
200g chocolate, melted
Blueberries, to serve

Preparation

Preheat the oven to 160 degrees Celsius and grease a 12-hole, ½ cup capacity muffin tin with non-stick cooking spray. Place the chocolate and butter into a heat-proof bowl over a pan of gently simmering water, until melted. Sift the flour and cocoa powder into a separate bowl and add the sugar. Add the eggs and chocolate mixture and stir to combine. Divide the mixture evenly between 10 of the muffin holes and bake for 20 minutes or until mud cakes feel firm to the touch. Cool in the tin for 5 minutes before turning out. Top the mud cakes with the melted chocolate and sprinkle with blueberries.
