In India rice is used in a lot of the desserts and being from Yorkshire I’m a big fan of rice pudding. And this recipe is great. The freshness from the orange and the spice of the cardamom are brilliant. The syrup on the top finishes it off completely.

Ingredients

Syrup
5 dessertspoons honey
2 dessertspoons water
2 oranges juiced
3 cardamom pods
Place all the ingredients in a saucepan and bring to the boil, reduce by 1/2, the pass through a sieve and leave to cool.

Rice
50g pudding rice Bring to boil & rinse under cold water
500ml milk
6 cardamom pods wrapped in muslin cloth
50g caster sugar
1 orange zested
100ml cream

Preparation

Place all the ingredients in a saucepan and slowly bring to the boil, allow to simmer slowly for about 45 minutes to an hour until it becomes thick in consistency. Remove from the heat and place in a suitable bowl and allow to cool.

Refrigerate for at least 4 hours before serving.

To serve place the required amount into 4 bowls and then add about 1 dessertspoon of the syrup over each one.

So So Tasty
I gave this one a try today after seeing it months ago on TV, for such a simple dish it's absolutely delicious. Used all quantaties as per recipe and it worked out perfectly. Fantastic subtle creamy citrus flavour in the rice and a punchy sweet sauce to go with it. This one is a keeper, i'll have to cook it again for the family!

I made this with arborio rice (probably 100g at least) and soy milk (instead of cows milk and cream). I served with cold stewed pears. Its was fantastic - a big hit at our dinner party last nite. Definitely will make again.

i think the quantity of rice is wrong - i used aborio but it didn't thicken - 50g? i don't think so. could you check please? a matley
