Coconut rice recipe

This is one of the best rice dishes I think I’ve had, the flavour from the coconut, chilli & curry leaves is wonderful and with the fish curry they complement each other so well.

Ingredients

500g Basmati rice steamed
¼ tsp black mustard seeds
10 curry leaves
50g freshly grated coconuts or shredded coconut
1 long green chillis thinly sliced on angle
1 red onion finely chopped
1 handful picked fresh coriander
3 dessertspoon of olive oil

Preparation

Use a non stick pan and dry fry the coconut until golden brown, then add the red onion mix with the coconut and add the chilli, curry leaves & mustard seed and cook for about 2 minutes.

Microwave the rice for a minute and add to the mix incorporating all the ingredients, finish with the coriander and the olive oil, season with some fresh sea salt and serve.

Love this Show
These recipies are simple, quick and nourishing. I don't particularly mind whether they are authentic or not, the important thing is that the chef makes you feel it would be fun to give it a go at home, well done! I happen to love curries and have started stocking my pantry with ingredients in anticipation of surprising my wife who happens to be a chef. I aim to make Indian food MY specialty!

Please read the above article carefully. It does not purport to be Indonesian coconut rice nor any other dishes other than what it is. I'm sure it's edible, and even delicious!

This is not the only way!
I have never heard of sugar being used in this recipe, nor oregano - this is definitely not from Chile! This is more like chimichurri which is Argentinian. It is such a shame that every other country gets its own feature show and yet it seems the producers of this show were unable to give Argentina, Chile and Peru due justice - instead, just merging them all together in a haphazard way for god knows what reason. Such a shame, I used to really enjoy this show.

Sticking to the steamer

To avoid food sticking to the bamboo steamer either place a cabbage leaf (or similar) in the bamboo steamer (placing the dumplings on top). Alternatively cut a round of baking paper and cut holes into it (as you would make a paper snowflake).
