Fish curry recipe

This curry came from my time in Kerala in the south of India whilst interviewing a French man. It’s got loads of flavour and a stunning creamy texture and when served with the coconut rice the dish is complete. We serve this in the restaurant and it’s become very popular.

Ingredients

2 long green chillis thinly sliced on angle
¼ tsp salt
¼ tsp cumin seeds
½ tsp black mustard seeds
2 garlic cloves finely chopped
1 dessertspoons minced ginger
1 brown onions finely chopped
4 plum tomatoes skinned & diced
1 tins of coconut milk
12 curry leaves
Vegetable oil
4x200g portions of white fish
1 handful of chopped coriander

Preparation

Heat the oil in a large saucepan. Add the mustard seed & cumin seed and stir until it starts to pop, then add the onion, garlic & ginger and sweat for about 5 minutes.

Add the chilli & curry leaves and cook for a further 5 minutes then add the coconut milk, fish stock & salt and bring to the boil then simmer for about 15 minutes. Remove from the heat and cool.

Refrigerate until ready to use.

Fry your fish skin side down in a fry pan until golden brown, then turn over and cook for about 2 minutes then add to the curry sauce, cook for a further 3-4 minutes, add the coriander to the sauce and serve.

What is the point of asking for comments if you don't do anything about them? This recipe has missing ingredients &/or steps as have been pointed out by others, but SBS doesn't care to make corrections. It might as well be channel 7, 9 or 10.

Good but confusing
I'm a big fan of this show - looked forward to every episode! I've also had success with recipes from this show in general. I did try this recipe and liked the result - very fresh and flavorful - but as another commented, where do the tomatoes and fish stock fit in??? I should perhaps have watched the video but impulsively just did this off the recipe. Still good, though.

I cooked this
Hi I cooked this curry and used salmon and served it with coconut rice and masala lassi. Yummy! Everyone loved it.

I love Barry Vera's progamme - when is he going again? He gave me a few new ideas for recipes and they have become favourites very quickly. I wanted to rate 4 stars but this does not seem to be working

Recipe Mistakes
In the preparation it does not specify at what point are tomatoes added. In the Ingredients if does not specify the amount of "FISH STOCK" to add to the recipe, although in the preparation it states that "Fish Stock" to be added.
