Vanessa Martin shares her special tiramisu recipe with Food Safari's Maeve O'Meara. Tiramisu means "pick me up" and this easy tiramisu recipe is sure to do just that.

For tasty variations on tiramisu, try Italian chef Giuseppe Vargetto's tiramisu recipe, or Graziella Alessi's tiramisu made with strega, Sambuca, and Italian meringue. Also, browse our cake recipes for more sweet inspiration.

Ingredients

6 eggs, separated
1 cup caster sugar
500g mascarpone
Hot, strong espresso coffee
Liqueur (as little or as much as you like according to taste – Vanessa loves a mixture of Tia Maria, Kahlua and Amaretto)
Pavesini biscuits (a slim version of Savioardi, which also work in this recipe)
Small block chocolate, to garnish

Preparation

In a bowl, beat the egg yolks with the sugar until thick and white. This will take at least 15 minutes. Add the mascarpone, and beat until smooth and just combined.

Combine the coffee with the liqueurs. Quickly dip biscuits, a few at a time, into the coffee mixture. Set aside on a plate to cool.

In a clean bowl, whisk the egg whites until thick and stiff. Gently fold into the mascarpone mixture.

Alternative layering the biscuits and mascarpone cream in individual glass bowls. Refrigerate for 2-3 hours or longer, preferably. Grate the chocolate over the top to serve.

Why doesnt it say how many this serves? Maybe its meant to be obvious. I need to make it for about 12 people, can anyone who made this comment on quantity?

Error in serving?
The recipe tells us to chill it for 2-3 hours or longer before serving, but the video showed them eating it without chilling it first . I think we should have been shown a chilled tiramisu. Many will disagree with me but I thought the one they ate looked too soft and sloppy and with far too many eggs. I think i'd rather know the recipe Lily found.

delicious!!
I made this for a family dinner party and it was sensational. To overcome the watery cream some mentioned, make sure you beat the mixture long enough. So incredibly light and fluffy. This will definitely become my tiramisu recipe.

SO-so
I prefer a not so watery cream in my tiramisu, a lovely recipe I came by, mixes mascarpone and Thickened cream with not so many eggs, it makes a nicer consistency :) marsala wine works well too.

Um..
this recipe's a bit silly cos it doesn't tell you how much biscuits or coffee you need or how many you can expect to serve

Easy & yum
Older Italians to whom I've spoken, traditionally use Marsala rather than the liqueurs

Couscous

Always fluff couscous with a fork, rather than a spoon, as this will keep the grains light and fluffy rather than stodgy.
