Ingredients

1 ¼ cinnamon sticks
6 cloves
4 black peppercorns
6 green cardamoms
1 teaspoon ground ginger
1 teaspoon fennel seeds

Preparation

Dry roast all the ingredients except the ginger for about 1-4 minutes.

Then add the ginger and leave to cool. Grind down in a pestle & mortar or a coffee grinder.

Keep in an airtight container for up to 6 months.

Add ¼ teaspoon to flavour 2 cups of tea.

How much milk and tea is used for one 1/4 teaspoon masala mix?

Amazing Chai!
Just tried out the Chai, my wife and I both loved it. We had to make a couple of small changes, instead of English breakfast tea, we used 2 standard tea bags, and instead of 9 cardimom pods, we used 1 teaspoon (maybe a little more) of ground cardimom. The results were fantastic. Just like you'd get at a cafe! Thanks for the recipe.
