Ingredients
2 eggs
120g caster sugar
200g mascarpone cheese
1 1/2 tbsp Crème de Café liqueur (coffee liqueur)
1 1/2 tbsp Bailey’s Irish Cream
1 1/2 tbsp Marsala
3 layers of sponge cake about 1 1/2cm thick and 22cm diameter (or about 24 sponge finger biscuits)
About 3/4 cup freshly made coffee, almost cold
About 1/4 cup Dutch cocoa
Preparation
In a bowl beat the eggs with the caster sugar for about 5 minutes. Fold in the mascarpone cheese, then gently mix in the Crème de Café liqueur, the Baileys’s Irish Cream and the Marsala.Place a layer of sponge cake in a cake tin of the same size or another round container. Drizzle one-third of the coffee onto the sponge cake, then carefully spread one-third of the mascarpone cream preparation over the top.
Add a second layer of sponge, drizzle with one-third of the coffee and spread one-third of the mascarpone cream over the top. Top with the last layer of cake, drizzle remaining coffee over and spread with remaining mascarpone cream.
Flatten the top and dust with Dutch cocoa. Refrigerate for at least 2 hours before serving. It’s easier to spoon the tiramisu onto plates.

How to tell your roast chicken is ready
Pierce the thigh of your chicken with a skewer to determine it is cooked through. This is the thickest part of the bird, and if the juices run clear (with no blood) you will know it is cooked.
