Easy to make and serve as a main course
Ingredients
1 cup basmathi rice2 onions
2 chillies
2 stem coriander leaves
1 tablespoon cooking oil
1 lemon/lime juice
Preparation
Place rice in microwave bowl, cover with water and cook in a microwave oven on medium until light and fluffy.Heat cooking oil in saucepan, add chillies and sliced onion and saute till golden brown.
Add rice, finely chopped coriander leaves and lemon juice and stir well.
Serve with papadams.
