Light and easy
Ingredients
1 cup sweetcorn (frozen )1 onion, brown, finely chopped
1 tablespoon cooking oil
1 chilli
1 teaspoon milk
1 teaspoon plain flour
1 cup water
1 stem fresh coriander leaf, finely chopped
Preparation
Cook frozen sweetcorn in a microwave oven with a little water until soft and tender.Heat cooking oil in saucepan on low. Add finely chopped onion, chilli and saute till golden brown.
Place half the portion of cooked sweetcorn in a blender along with plain flour, milk and some water and blend coarsely.
Transfer the blended sweetcorn to the saucepan along with the sweetcorn from the microwave bowl, and cook for a further few minutes.
Turn off the heat and sprinkle chopped coriander leaves into the dish. Add a dash of lemon/lime juice and fresh ground pepper. Enjoy!

Missing Ingredients?
This dish was absolutely disgusting!! I've never been so harsh about a recipe before, but it's true! There must be some ingredients missing because, as it is, the soup was ridiculously bland. I had to add ginger, veggie stock, soy sauce, Chinese five spice and a star anise. Thankfully the end result was tasty enough to warrant compliments from the family, but there is no praise for this recipe! Avoid at all costs - it may appear simple, but you're compromising on flavour.
