Macaroni cheese originated in Italy and there are many recipes dating back many years. I enjoyed this dish growing up in my homeland Scotland, as my mother used to make it. This is a low budget, easy and tasty dish.

Ingredients

2 cups of uncooked macaroni pasta
2 tablespoons margarine or butter
2 tablespoons plain flour
2 cups milk
2 cups matured cheese, grated
Salt
Pepper
A pinch of grated nutmeg
Extra grated cheese for topping
Knob of butter or margarine

Preparation

Cook pasta in a large pot of boiling salted water with a knob of margarine or butter for about 12 minutes until cooked. Drain pasta and rinse with cold water. Once drained, put pasta in a lightly greased casserole dish.

Melt butter or margarine in a pot over a low heat. Add flour and with a whisk cook for about a minute. Remove pot from heat, add and whisk in the milk. Return pot to heat, increase heat while continually whisking until sauce boils and thickens. Remove from heat and add a pinch of salt, a few grinds of pepper and a pinch of nutmeg.

Add cheese and whisk to a smooth sauce. Pour and mix sauce into the pasta and top with the extra cheese. Place dish under the grill until cheese browns.

Easy, Quick and Tasty
Quick and easy to prepare. Can profit from the addition of bacon, tomatoes and parsley - oh yes and breadcrumbs added to the cheese topping.
