Corn fritters recipe (perkedel jagung)

This is a very tasty snack that can be eaten as an appetiser or to accompany the main meal. It is very easy to make and can be prepared a few hours before frying it.

Ingredients

1 tin of corn kernel, drained
2 cloves of garlic
2 bird's eye chillies
1/2 tsp of nutmeg powder
1/2 tsp of pepper
1 egg
1/2 tsp sugar
Salt to taste
2 tbsp tapioca flour or corn flour
2 tbsp rice flour
2 pieces of shallot, chopped finely

Preparation

Place the corn, egg, garlic and chillies in a blender. Blend until well mixed. Pour the mixture into a bowl, add all the dry ingredients and the chopped shallot. Mix well.

Heat a wok or a deep frying pan, add one cup of oil. When the oil is shot, fry spoonfuls of corn mixture in the oil until golden brown, drain and place on absorbent paper.

Serve hot as snacks or with the main meal.

Fantastic dish!!!
This is a simple dish to create yet is a complex fusion of flavours that come together in perfect balance. Highly addictive as it can be served up with almost anything, or even eaten on it's own. Easy to manipulate if you want to put your own spin on things ie. add tinned tuna for something different :)
