Ricotta & Ham Fritters

Ingredients

2 cups (400g) ricotta
3 eggs, lightly beaten
200g ham, finely diced
4 green onions (shallots), finely chopped
1 bunch chives, finely chopped
2/3 cup (100g) plain flour
pinch of bicarbonate of soda
1/3 cup (80ml) rice bran oil
tomato chutney or relish, to serve

Preparation

1. Lightly whisk ricotta and egg in a bowl until smooth. Stir in ham, green onion and chives. Stir in sifted flour and bicarbonate of soda and season to taste.

2. Heat oil in a frying pan on medium-high. Shallow-fry spoonfuls of ricotta mixture in batches for 2-3 minutes, until golden and cooked through. Drain on paper towel and serve immediately with tomato chutney or relish.
