Chocolate cake recipe

This cake won me the third place at the Bream Creek Show. I was so excited I didn’t stop bragging about it for a week.

Ingredients

125g butter, softened
150g brown sugar
1 tsp vanilla essence
3 eggs
100g dark chocolate, melted
100g sour cream
2 tbsp cocoa
100g self-raising flour
125g almond meal

Ganache
100mls cream
250g chocolate, broken into small bits

Preparation

Preheat the oven to 170°C. Grease and line a 22cm springform cake tin or similar.

Cream the butter and sugar with the vanilla. Beat in the eggs one at time. If the mix looks a bit curdled, don’t worry, it isn’t; it’ll come back together when we add the flour, if not before. Beat in the chocolate, then the sour cream until just combined. Fold in the sifted cocoa and flour and then the almond meal. Scrape into the cake tin and smooth the top a bit. Bake in preheated oven for about 40 mins or until a skewer inserted into the centre comes out clean. Ice with the ganache (see below).

Ganache
Heat the cream in a small saucepan and when it comes to the boil, whisk in the chocolate, returning to the heat if necessary to melt it. Stir until the mixture is smooth. Allow to set just enough to be able to spread over the cake.

I made this cake just recently + it was absolutely to die for, as mentioned earlier it didn't rise quite so much, I assume it was to due issues of not 'folding' the cream in properly with sufficient air. Better luck next time, cannot wait to eat some again!!

I made this cake exactly to the recipe but it did not rise as much as Mathews it only rose about 1" around the sides and a bit higher in the middle...does anyone know what i did wrong, i baked it at 170 degrees fan forced for 40 minutes.....bit disappointed

Michelle, I haven't made this cake yet but you could try sunflower seed or linseed and grounding them in a food processor as a substitute for the almond meal. Anything with similar consistency/texture as the almond meal would probably work.
