Roasted apricots have a delicious intensity and are easy to prepare.
 

Ingredients

1kg apricots
110g (1/2 cup) caster sugar
Ground cinnamon

Preparation

Preheat oven to 180C (350F).

Cut the fruit in half, remove the stone and place skin side down on a baking tray.

Sprinkle with sugar and cinnamon, bake in preheated oven for 25 minutes.

When cool, use in cakes, muffins and fruit tarts.
