Linguine with ricotta and lemon recipe

Ingredients

360g linguine
2 lemons
200g ricotta
4 tbsp parmesan
Salt and pepper

Preparation

Bring a large pot of water to the boil. Add 1 tbsp of salt and bring back to the boil. Add linguine and cook until al dente (approx 6 minutes). Drain water into a colander – do not discard.

Place ricotta in a bowl. Grate rind from one lemon into the ricotta. Add 2 cups of saved HOT pasta water. Mix well and add salt and pepper into the ricotta (be generous with pepper, this dish can take it).

Add the mixture to frypan on medium heat. Toss in the linguine. Fold for about 2 minutes on a high heat, adding the parmesan.

Grate rind from remaining lemon on top and serve.
