Creamy salmon pasta recipe

A deliciously fresh, quick and easy to prepare pasta dish. This one is always a hit with our dinner guests and its super simple and very tasty. Be sure and get good quality salmon and zucchini.

Ingredients

Olive oil
Garlic
Anchovies
Capers
Smoked salmon
Zucchini
Light thickened cream
White wine
Lemon
Salt and pepper

Preparation

Finely chop the garlic. Wash and chop 3 or 4 medium sized continental zucchini (cut these into bayonets approximately 10cm long and 2mm thick). Roughly separate and then tear/chop smoked salmon (at least 200g) into strips approx 2cm long. Quarter a lemon.

Place a large pot full of water on to boil for the pasta. Lightly braise the finely chopped garlic and add 2/3 tinned anchovies and cook until they begin to melt. Add a splash of white wine.

Add the zucchini strips and toss until they begin to soften. Add capers (I prefer the smaller ones) and a tub of light thickened cream. Allow to simmer (10mins on low heat so that sauce reduces). Cook your pasta (I prefer a tagliatelle or fettuccine). Stir in the salmon and allow sauce to simmer for 2 minutes. Grate Parmesan into sauce and season to taste.

Ladle over strained pasta and serve with lemon wedge.

Second time, as per recipe, love it, full of flavour! Easy to cook and great way to use up a few floating zucchini :) Using angel hair pasta because that's my favourite.

Cooking it 2nd time. I experiment with vegetables, include what I have in the fridge. Today it was asparagus with green beans. Will be cooking it again and again. My hubby praise it a lot. many thanks

Yummy....
This was really good. I didn't have any zucchini but I had a cucumber so I cut that up. Probably not very masterchef but it still looked and tasted fantastic. I only used 250g of fettucini and it was the right amount. I didn't add the parmesan cheese because it is too strong and overpowers the delicate salmon flavour. Used canned red salmon. All in all a fabulous meal that I loved.

Cooking artichokes
