Chicken breast with dill cream sauce with rice and snow peas recipe

This is a very simple dish to make and most of it can be pre-prepared up to 36 hours in advance. A full flavoured dish best enjoyed al fresco on a beautiful night.

Ingredients

1 x chicken breast per person (cleaned of fat)
1 x wheel of Havarti cheese (or 300g wedge)
300 ml of full cream
1 x large bunch of fresh dill (set aside 1 sprig per plate for garnish)
10 snow peas per person
2 cups jasmine rice (cooked, drained and cooled)

Preparation

In a small saucepan on a low heat, place cheese (wedges), cream and finely chopped dill. Simmer till cheese is completely melted with cream. Set aside. (It is best to do this the day before so the flavours meld more intensely).

Pre-heat oven to 190°C.

Lightly spray chicken breast with canola oil and place on baking tray. Bake for 25 minutes. When cooked, set aside for 5 minutes. After putting chicken in oven, place cheese sauce on low heat and stir regularly.

When chicken has 10 minutes to go, place drained cold rice into microwave and heat for 2 minutes (or till hot, depending on Microwave). While chicken is cooking, prepare a saucepan and steamer and have water boiling ready for when the chicken is cooked.

After removing chicken from oven, place snow peas in steamer and steam for 3 minutes.

Presentation
Use small moulds, ramikens or cups to place a rice mould in centre of plate. Slice chicken breasts into approx 5 slices and lean against and around rice mould. Decorate around breast and rice with snow peas. Drizzle the cream sauce over chicken and rice. Lay a sprig of dill on top of rice. Place extra sauce in saucier on table.
