Fresh pasta dough recipe (pasta fresca)

Ingredients

250g unbleached flour
250g durum-wheat flour
pinch salt
4 eggs

Preparation

Sift the flour and salt into the bowl of an electric mixer fitted with a dough hook.  Add the eggs one at a time and knead on low speed for about 10 minutes.  Add a little water, if required – the dough should be soft but not sticky.  Divide the dough into 2-3 pieces so it is easier to work with.  Roll out each piece by pushing it through a pasta machine on the highest setting.  Fold it in half and run through the machine again several times, folding each time.  This process is called laminating – the dough should be silky and smooth.  Adjust the setting on the pasta machine and roll the pasta until it is 1-2 mm thick.  Cut into desired shapes and spread out on a floured tray and cook the same day.
