More Onions
Not an original recipe, but a favourite - 4 red onions peeled, base intact, sliced nearly through into 8's. 2 tablespoons each - olive oil, red wine vinegar, grainy mustard & honey - mixed and poured over slightly opened onions in fitting ovenproof bowl. Bake in oven for a hour at 350 degrees and serve hot with roast, steak, chicken etc. or cold as a spread.

Hot Tips

Ethiopian Injera

Injera, the Ethiopian pancake-style bread is traditionally made with teff (a native wheat). Teff flour may be available at good health food stores, however if you can’t find it, substitute buckwheat, which does not taste exactly like injera but is similar in texture and colour.

Glossary

Dragon Fruit

Dragon fruit (thanh long tuoi) comes in two varieties - one with bright red flesh and the other white, both have tiny black seeds. Although it can be bland in flavour it makes a striking addition to a fruit platter.
