Fried zucchini flower patties recipe

Ingredients

15 zucchini flowers
2 heaped tbsp plain flour
2 heaped tbsp self-raising flour
1 tbsp corn flour
3 stems of parsley, finely chopped
Salt & pepper to taste
Approx 1 cup tepid water
4 tbsp extra virgin olive oil for frying

Preparation

Remove stem and pistil of flowers, rinse in cold water and set aside.

Mix dry ingredients in a bowl.  Add water to make a paste of medium consistency (not too runny or too thick) and season with salt and pepper and stir in parsley.

Squeeze excess water from flowers, slice (1cm) and add to paste.

Make patties using 1 heaped tablespoon of mixture and flatten to 1cm thick. Fry til golden brown on each side. Add more oil if necessary.

Place on paper towel and serve immediately.

Caterina is correct, these are what the calabrese call pattee. They never have anchovies! To all those people who disagree with Caterina Italian food is regional what you may do may be different to what others do! Yes Zeppole have anchovies they are made with potato, flour and yeast. You guys must have missed out as children not having your nonne or mums make them for you

This recipe is from regions south of Italy. The recipe you're thinking of are zippole which can be sweet made with sugar or savoury with anchovies. They are all delicious! Thanks for the memory-mum made these whenever the zucchini flowers were ready in our garden.
