A good chocolate brownie is a wondrous thing, and that’s exactly what you’ll get with this recipe. We’ve been making and enjoying these brownies for years, and we hope to do so for many more to come.

Featured as part of our Cooks and their Books series, this recipe comes courtesy of Allan Campion and Michele Curtis: chefs, parents and award-winning authors.

Ingredients

180 g butter
180 g dark chocolate, chopped
3 eggs
1 tsp vanilla extract
250 g (1 cup plus 2 tbsp) caster sugar
110 g (²⁄³ cup plus 1 tbsp) plain flour
½ tsp salt
180 g (1½ cups) chopped walnuts

Preparation

Preheat oven to 180°C.

Butter and line a lamington tin.

Melt the butter and chocolate together by placing them in a bowl over a saucepan of simmering water or in a microwave on low for 1–2 minutes. Beat the eggs, vanilla and caster sugar together until light and doubled in bulk. Sift the flour and salt together. Add the flour, melted chocolate and walnuts to the beaten eggs and mix to combine.

Pour into the prepared lamington tin and bake in the preheated oven for 25 minutes. Take care not to overcook the brownies or they will lose their deliciously gooey texture. Allow to cool before cutting.

Great Recipe
Just made these and they're great , it doesn't look dark enough when its all put together but when they come out they are perfect, would use a lot less walnuts than it says, a bit too much for me, also had to put them in for an extra 5 mins as the skewer was coming out a bit wet. very restaurant quality

Yummmmmmmmmmmmmm
Not having made brownies before I found these to be very easy and absolutely yummy. I made them for morning tea at work, and I can say they didnt last very long at all. I did have to cook a little longer than was stated, but that may be because of my oven.

Hot Tips

Couscous

Always fluff couscous with a fork, rather than a spoon, as this will keep the grains light and fluffy rather than stodgy.

Glossary

Hominy

Hominy is dried white corn which is used to make a much loved dish called Pozole. Some small restaurants in Mexico serve only this dish.
