Vanilla slice recipe

Ingredients

For the pastry:
130g plain flour
100g butter
50g sugar
1 egg yolk

For the filling:
250g low-fat quark cheese
200g low-fat yoghurt
2 tsp vanilla extract
3 tbsp cornflour
50g sugar
2 eggs
2 egg yolks
1 tsp baking powder

In addition:
100ml orange juice
200g sugar
1 vanilla pod, seeds scraped out

Preparation

Preheat the oven to 180°C.

Place the flour, butter, sugar and the egg yolk into a bowl and knead to form a smooth dough. Add 1 tablespoon of cold water if the dough is too dry. Roll the dough into a ball, wrap in plastic wrap and chill for 30 minutes.

Mix the low-fat quark cheese together with the yoghurt, vanilla extract and cornflour. Stir in the sugar, eggs, egg yolks and baking powder.

Line the cake tin with baking paper. Roll the pastry out thinly, then place into the baking tin. Pour the quark mixture over the pastry, place in the oven and bake for 50 - 60 minutes.

In the meantime warm the orange juice in a saucepan and stir in the sugar. Boil for a few minutes until the mixture begins to caramelise. Now stir in the vanilla seeds. Brush the caramel sauce over the cake and bake in the oven for a further 5 minutes.

Remove from the oven and allow to cool. Use the baking paper to ease the cake out of the baking tin. Cut into slices and serve.
