Porridge with salt
Porridge in Scotland is cooked slowly and gently to create a thick consistency. The Scots would never dream of sweetening their porridge, instead choosing to flavour it with salt.
Glossary
Tahini
A paste or butter obtained from grinding sesame seeds. Used in Middle Eastern and Mediterranean cooking, often to thicken hommos or other dips but also as a sweet filling in cakes and pastries.
