When Greeks taste something delicious, they have a lovely phrase 'Yia Sta Heria Stas' which translates as 'I kiss your hands', celebrating the skill of the cook.

Hamburgers
Be careful not to over-handle hamburger patties when you are moulding them. The more you touch them the more compact the meat will become. This will result in a tough, dense hamburger.
Glossary
Roquefort
A French veined cheese made from ewe's milk. It is matured in ancient caves in the Aveyron region and takes three months to ripen. The result is a semi-soft crumbly cheese with blue-green veins.
