To de-beard a mussel grab the beard (the byssal threads that connect the mussel to the rocks in the sea) with your fingers, and pull them out, tugging toward the hinged point of the shell.
Glossary
Vichyssoise
A soup made from potatoes, leeks and cream, served cold, garnished with chopped chives. The name is also used to refer to any cold soup based on potatoes and another vegetable.
