Few Melbourne wine lists can rival France-Soir's. Owner and sommelier Jean-Paul Prunetti has more than 1500 different European and Australian wines on offer. Then there's the food, which is about as French as you can get. Garlic escargot, salmon gravlax, bifstek, pommes frites and creme brulee - all par excellence. Service is also excellent, considering the difficulties presented by the long, narrow room.

Hot Tips
Steaming fish - hot tip
When steaming fish, slice through flesh for even cooking. This allows the heat to penetrate the thicker parts of the fish, preventing the thinner parts (especially near the tail) from overcooking. If marinating the fish before cooking, this also allows the flesh to absorb the flavours.
Glossary

A key ingredient for many dishes including the famous French onion soup. Look for firm onions with shiny papery skin. The Mako region in Hungary lays claim to an ingenious method of cultivation which is said to produce superior quality onions.
