The menu changes constantly and is delivered verbally at this colourful, welcoming eatery. Using organic ingredients where possible, it offers tasty North African cuisine at reasonable prices. Few places offer a three-course banquet as cheap and satisfying as the one found here. All dishes are vegetarian, but they're varied and flavoursome. Soups, of course, are a specialty, and include variations such as Egyptian-style lentil and rib-sticking potato. Be on the lookout for the much-vaunted baked chickpea dish with yoghurt, pide, tahini and slivered almonds.

Berbere substitution

When making Doro Wat, about 4 tablespoons of Berebere, an extremely hot Ethiopian red pepper mixture, is used in each recipe. You can substitute a combination of cayenne pepper and paprika (which is not Ethiopian) to replicate the characteristic dark color and flavor.

Glossary

Acidulated Water

Water to which an acid substance such as lemon juice or wine vinegar is added. Once peeled, vegetables such as celery and artichokes can be immersed in it to stop them from going brown.
