Whether you are merely peckish for a spicy Middle Eastern snack or hungry for a super mezze plate this little cafe in leafy Albert Park will slice, grill or pan-fry it just the way you like. Kamel serves up a range of vegetarian and non-vegetarian Middle Eastern cuisine. It only has a few pavement tables but there are two dozen super mezze plates on offer and snacks such as fish balls wrapped in vine leaves. Hot Tips
Toasting spices
Toasting whole spices in a dry pan can help to bring out the essential oils and the flavour in the spice, however be careful to taste as you add the spice to your dish as the flavour will have changed and you may need less. Toasting pre-ground spices is a little trickier and it can ruin the flavour of the spice altogether.
Glossary
Vegetable carving
Part of many women’s education in South East Asian countries is the art of creating pretty and colourful garnishes for meals with fruit and vegetables.
