El Sol Mexican Restaurant

People keep coming back to this cantina-style restaurant in Cronulla for one main reason - the atmosphere. You can practically feel its festive spirit spilling onto the street as you walk towards its doors. The room is decorated with memorabilia - postcards, posters, sombreros, surfboards - and populated by families, exuberant youths and rowdy party groups, all fuelled by Mexican beer and margaritas, and primed to enjoy the night's festivities. All the traditional Mexican fare is here - salsa, fajitas, enchiladas, quesadillas, jalapeno peppers - though it is merely an accompaniment to the unrivalled ambience.

Hot Tips

Resting meat

Never serve roasted meat straight out of the oven. Instead allow the meat to rest in a warm place, loosely covered with foil, for around 20 minutes, This will allow the juices to redistribute evenly among the meat, rather than escaping onto the plate when the meat is carved.

Glossary

Daun Salam

Literally "Salam" leaves, sometimes known as 'Indonesian bay leaves' and found in Asian grocery stores.
