The Duckstein's generous serves of leberkase, veal schnitzel, and seemingly bottomless bowls of hearty goulash would be enough to get even the most hardened alpine men loosening their lederhosen. So, if this is your first taste of Bavarian fare, you'd be well advised to share the Brewer's Pan - a frying pan packed with pan-fried potatoes, kassler smoked pork cutlets and bratwurst sausages. Wash it down with a tankard, or if you have room, a half-litre stein of the brewery's own boutique beers from the ever-changing list. The light and dark German-style beers are brewed in strict accordance with the German Purity Law, and partner any dish perfectly. For dedicated wine drinkers, there's a small list of local and German labels, including a fine German champagne. Try, if you can, to save a little room for the hot apple strudel with vanilla sauce and cream, or Oma's Rote Grutze - lightly cooked fresh blueberries, blackberries and raspberries topped with a vanilla bean sauce. Sundays are extremely busy, so it's advisable to book a table. In winter, reserve a place in the cosy restaurant or under the heated marquee. In summer, take to the shade of an umbrella in the beer garden. And in spring, come and enjoy the live traditional yodelling and oompah music of German band Aramis.

Hot Tips

Resting meat

Never serve roasted meat straight out of the oven. Instead allow the meat to rest in a warm place, loosely covered with foil, for around 20 minutes, This will allow the juices to redistribute evenly among the meat, rather than escaping onto the plate when the meat is carved.

Glossary

Daun Salam

Literally "Salam" leaves, sometimes known as 'Indonesian bay leaves' and found in Asian grocery stores.
