In the 12th century, the Moors of Morocco brought a unique fusion of flavours to Spain, Portugal, Sicily and Provence. Nine centuries on, their legacy is alive and kicking throughout the Mediterranean and on the shores of a tiny lake in East Perth. Here, Amel Adile and wife Meryem have created a delightful blend of Moorish flavours and Australian style that is, as the name suggests, a little more-ish. Sitting outside in the shade of an umbrella, with nothing but the cycle path between you and the water's edge, you can enjoy peace, tranquillity and taste sensations such as the Turkish bread and dips; spiced chicken wings; steamed cumin lamb shanks with fennel and potato mash in red wine and tomato jus; or the chargrilled prime eye fillet with roasted potato and carrot in a white wine and tarragon cream sauce. There's also an extensive drinks menu and cake display to deliberate over, but you shouldn't rush the experience, particularly on Friday and Saturday nights when there is often live music and belly dancing.

Toasting spices

Toasting whole spices in a dry pan can help to bring out the essential oils and the flavour in the spice, however be careful to taste as you add the spice to your dish as the flavour will have changed and you may need less. Toasting pre-ground spices is a little trickier and it can ruin the flavour of the spice altogether.

Vegetable carving

Part of many women’s education in South East Asian countries is the art of creating pretty and colourful garnishes for meals with fruit and vegetables.
