Mo's Restaurant, nestled within the Feathertop Alpine Lodge at Falls Creek, is possibly the most romantic dining establishment on the mountain. What it lacks in white ties, it makes up for in spades with atmosphere and comfort. Deep red chesterfields welcome the visitor into a cozy space lit by an open fireplace and speckled with red gum tables. Atmosphere is only half of the beauty of Mo's, though. At four-thirty in the afternoon, happy hour commences with Becks, bubbles and oysters, all of which are consumed voraciously by the patronage. It is a delicious way to wind down before dinner. Chef Bob Chapman has assembled a menu with something for everyone, which changes weekly, complemented by a fine selection of wines. After oysters a la Becks, a reasonable entree would be the potato gnocchi tossed in a creamy pesto sauce and sprinkled with crispy bacon, followed closely by Bob's sumptuous porcini mushroom-stuffed chicken breast, served on a steaming bed of al dente Lebanese nut rice.

How to store spices

Spices are generally at their best for up to a month, if stored correctly. Store spices in an airtight container in a cool, dark place. Humidity, light and heat will cause herbs and spices to quickly lose their flavour.

Glossary

Babka

A sweet Polish yeast bread that commonly has almond and raisins. Other recent variations feature chocolate and cinnamon.
