The crocodile, emu, kangaroo and wallaby on the menu might seem a tad gimmicky, but there is careful attention to matching native spices and garnishes with the dishes in question. Native peppers, lemon myrtle, roasted wattleseed and saltbush leaves are all used to great effect.
