Teppansan Japanese Cafe
Teppansan Japanese Cafe
179 Russell St
Melbourne VIC 3000
Phone: (03) 96631938
This Japanese cafe occupies a long narrow space with plain black tables and chairs. These minimalist furnishings aside, there is plenty to look at with walls hung with bamboo lattice, calligraphy-style paintings and an enormous abstract mural of a bustling streetscape. The open kitchen exposes the brisk movements of the chefs to ogling diners. The menu features a small selection of sushi and sashimi but (as advertised by the name) the menu is dominated by teppanyaki, with many varieties available. Those looking for something completely different ought to try the signature Japanese pizza.

Hot Tips
Washing rice
Rinsing long-grain white rice before cooking removes excess starch, thus helping the rice cook more evenly and be less sticky. Some specialty rice, such as basmati, is always rinsed and soaked before cooking to obtain separate, perfectly cooked grains. However, other rice, such as Arborio, prized for its starchiness in risotto, is never rinsed.
Glossary
Rice Flour
Rice flour can be used to thicken soups and stews, as well as providing an alternative to wheat flour in cakes and biscuits.
