Green pizzas are on the menu here. We know that doesn't sound too appetising, but we're not talking about the colour. The woodfired pizzas at Verde are made from 100 per cent organic flour and local ingredients. Try the roast pumpkin pizza with goats cheese, pine nuts, tomato and rocket; or the pork and fennel sausage pizza with cherry tomato, parmesan and oregano.

Hot Tips
Soaking a clay-pot
Before cooking with a clay-pot soak it in water (which is absorbed into the pores of the clay). As the pot heats up in the oven, the water will evaporate, producing steam, this will prevent the food from drying out.
Glossary
Tapioca Starch
Tapioca starch (povilho azedo) fermented and similar in texture to cornflour, it is used to make pao de queijo, a cheese bread served all over Brazil.
