It must be fantastic to live in Neil Perry's world. He owns some of the country's top restaurants (with more on the way), has hosted no less than three different cooking shows and is even the Iron Chef of our national cuisine. In fact, Perry's world is so fanciful that even the mundane things in life transcend into the sublime, just like his latest venture in the Crown Towers lobby, the Waiting Room.
Most people would find spending a few hours in a hotel lobby arduous. Those people have never tried it in Perry's re-imagining. Grant Cheyne's sleek fitout combines elegant grandeur with intimate detail to create a space that is at once decadent and comfortable. The offerings at TWR are then finished off with a typically polished Rockpool-esque wine list - complete with seasonal cocktails and bespoke beers - matched with Mediterranean-inspired baguettes, salads, montaditos and pinchos all done as only Neil Perry can.

Preserving
Vinegar is one of the main preservatives used in Filipino cooking and therefore dishes cooked adobo or sinigang-style preserve well due to the effect of vinegar. Both these dishes will keep for several days in the fridge and are often made in large batches, then reheated.
Glossary
Acidulated Water
Water to which an acid substance such as lemon juice or wine vinegar is added. Once peeled, vegetables such as celery and artichokes can be immersed in it to stop them from going brown.
