This vegetarian restaurant is well known throughout Sydney, and has many converts coming to West Ryde from all over the city for its 100 percent vegan-friendly Asian cuisine. The daily yum cha is extremely popular, with particular favourites such as the mock meat steamed 'pork' buns and 'prawn' dumplings. Come dinnertime, the lemongrass and chilli 'chicken', 'beef' in black bean sauce, Peking 'duck' and 'cod' hot pot are all popular mains. This is vegetarian food that's perfect for vegos and vegans who have days when they really just miss those old favourite meat dishes, and omnivores love it too.

Salting an eggplant

Salting an eggplant is only necessary if the eggplant is over-mature and is to be fried (salting the eggplant stops it absorbing too much oil). If this is the case sprinkle the eggplant with salt and leave to drain in a colander for 20 minutes. Rinse quickly to remove salt before cooking.
