Given that Oliver's is located in the heart of far north Queensland's tourist centre and spruiks a menu filled with native Australian ingredients, you could be forgiven for assuming this restaurant has eyes only for the kitsch tourist market. It's only on closer inspection that you'll find this place is anything but a gimmicky restaurant.

Instead, what you'll find is mod-Oz cuisine that fully incorporates native ingredients into its menu. Barramundi with lemon myrtle cooked in paper bark seems like an overdose of Australiana until you taste the combined end result.

Desserts are an even greater success of incorporated native flavours. The mountain pepper creme brulee with banana, rum and macadamia marmalade proves an ideal winter warmer to finish off your meal.

Spice it up

It pays to sort through your spices at least every six months and throw out any that are past their use-by date. Replacing them with fresh spices will make all the difference to an Indian or Cape Malay curry. Unless you often cook for large crowds, buy spices in small quantities and ideally source them from a vendor you know has a good turnover to ensure freshness.
