Making use of a 1930s space in Potts Point, the Apollo offers traditional Greek food with modern sensibilities, and in turn creates a family friendly, keeps-you-coming-back-for-more restaurant. Run by Sydney food royalty Sam Christie (Longrain) and Jonathan Barthelmess (Manly Pavilion), the pair have created their own style of "Greek chic", where instead of overusing Greek symbols and stereotypes in the decorating of the restaurant to let us know what we're eating, they let the food speak for itself. Offering all your Grecian favourites of olives, salads and mouth-watering lamb, you can also choose form an array of seafood and ring-ins, including the veal and sweetbread meatballs.

Kibbeh Nayeh

For this raw meat dish, make sure the mince is very fresh with a bright pink colour, and contains little to no fat. To achieve the very fine mince the meat should be put through a mincer two or three times.

Glossary

Gremolata

Italian garnish of raw, finely chopped garlic, parsley and lemon zest. It is usually sprinkled over slow-cooked braised meats, especially Osso Bucco.
