Many restaurants can get bogged down in only serving a traditional menu, without flexing their culinary muscle with some creativity. Lucky for Toorak Gardens residents, this restaurant isn't one of those. This restaurant manages to offer a choice selection of classic dishes alongside an array of brilliantly innovative ones still in line with the ethos of Chinese cuisine. Crab meat and asparagus soup isn't something you would normally find at your local takeaway joint, but it works. Shark lips are another item on the menu that may intimidate a few traditionalists, but they offer rich rewards for those brave enough to try.

Pickling
Pickling is a common preservation technique. Start by gently boiling a brine of water, vinegar and salt. Pour this into a sterilised jar with preferred vegetables, such as cucumbers. For an extra kick, add garlic, horseradish and whole dill stems. Seal the jar and leave for several weeks to ferment.
