Residents of Ipswich, QLD enjoy a bite

Residents of Ipswich in Queensland have made the world's largest lamington, weighing in at over 1,300 kgs, as part of National Lamington Day.

Lord Lamington would be chuffed.
 
Not only was the former Queensland governor (1896-1901) honoured by having a chocolate and coconut-covered cake named in his honour, but now the humble lamington could be in the Guinness Book of Records.
 
The finishing touches were made to a 1,320kg lamington in Ipswich, west of Brisbane, on National Lamington Day.
 
President of the Queensland Law Society, solicitor Ian Berry, oversaw the weigh-in and will sign the documents to attest to the lamington's size and weight.
 
The documentation will then be submitted for the record books.

Not one to wait, Ipswich Mayor Paul Pisasale said: "On behalf of Lord Lamington I officially declare Ipswich the home of the world's largest lamington."
 
The lamington was cut in the presence of Lord Lamington's great grandson Alex Scrimgeour and great granddaughter Belinda Leigh, both visiting Australia.
 
Mr Scrimgeour said he had never tried lamingtons until a week ago, and from the look on his face as he ate a slice, rather wished he hadn't.
 

Ipswich 

Ipswich is a city which prides itself on community involvement, and the cake was sponsored by a number of businesses, including John Grant Motors.
 
Mr Grant recently hit the headlines over his loan of a ute to Prime Minister Kevin Rudd in what has become known as the Utegate affair.
 
The car dealer provided two utes to carry the cake ingredients and this time, unlike his loan to Mr Rudd, he received a return - a slice of lamington.

Lamington history
 
It is said a maidservant to Lord Lamington at Government House in Brisbane accidentally dropped the governor's favourite sponge cake into some melted chocolate.
 
Not one to waste food, Lord Lamington suggested the chocolate-covered sponge be rolled in coconut to avoid messy fingers, and the lamington was born.
 
The giant cake, also sponsored by Leighton Constructions, is being distributed - in small pieces - to council and road workers.
