Fattoush is a perfect combination of summer vegetables, the "queen of salads". Fattoush combines Lebanese cress or purslane, cucumber, radish, tomatoes, capsicum, spring onions, mint and parsley, dressed with lemon juice, olive oil and sumac spice.

Fattoush is a perfect combination of summer vegetables, the "queen of salads". Fattoush combines Lebanese cress or purslane, cucumber, radish, tomatoes, capsicum, spring onions, mint and parsley, dressed with lemon juice, olive oil and sumac spice.

The final touch - preferably just before serving - is to break small pieces of deep-fried or baked Lebanese bread over the salad. It's the queen of salads, as our chef Fouad Sayed will tell you.
