Masaaki Koyama has been a sushi chef for more than 20 years. He moved to Tasmania after meeting a local girl in Japan. Based in the picturesque country town of Geeveston, his gourmet sushi includes the best local ingredients and his menu changes to reflect the seasons. The locals have been a great support to his business and visitors are always delighted to find such high-quality food in such a small town! Main ingredients include local fresh fish (stripey trumpeter, ocean trout, yellow fin tuna), local free-range eggs, and the juiciest, crunchiest, freshest vegetables Tasmania offers – often organic too.
