1. Smashed green olive and ruby grapefruit salad

A delicious waxy potato cooked in duck fat is something deeply rich and thrilling. Lots of garlic, white beans for some extra creamy crunch, and an excessive amount of sage makes it even better.

3. Braised baby gem, peas, speck & crème fraîche 

Based on a classic French dish, this recipe has the addition of speck that adds an extra tasty smoky element.

4. Yoghurt and cucumber salad

Eaten as a salad rather than a dip, this Lebanese recipe complements dishes like barbecued meats, baked kibbeh and stuffed vegetables.


5. Crumbed fried zucchini

Kefalotiri and kefalograviera are Greek hard cheeses made from a mixture of sheep's and goat’s milk. Perfect for frying, in this recipe they add luxuriousness to the breadcrumb coating on the fried zucchini. Great for your next meze platter!

6. Cabbage salad with mint, chilli and sesame seeds

It's pretty amazing how far a single head of cabbage can go. This simple salad gets a nice chilli flavour that balances well with the freshness and crispness of the cabbage.

7. Carrots, their tops, honey and smoked yoghurt 

There is something so satisfying about the versatile carrot and this recipe also has a carrot top pesto to go alongside these charred carrots.

A fast and easy favourite that will have you dishing up bowls full in no time.

13. Caramelised fig, orange and goat's cheese salad

Working with caramel may seem intimidating but in this case you needn’t worry; the juicy fruit with the creamy cheese all balances out superbly. 

14. Chilean salsa

Food Safari Fire favourite, this fresh, beautifully balanced salsa is one of those all-purpose additions to a barbecue that you’ll make again and again.

15. Broccolini with almond, anchovy and chilli

An excellent and very simple side dish of broccoli, salty anchovy, a little heat from the chilli and crunchy almonds all brought together with butter and lemon.
