This Greek chicken and rice pie is next level and brings together some of Greece’s most popular ingredients – silverbeet, haloumi, Kalamata olives, rice and filo pastry.

2. Wrap it like a pro

If you are a filo fiend then these haloumi, mint and preserved lemon cigars need to be on your radar. Serve them hot with a squeeze of lemon. 

3. 'Fake moussaka'

Sometimes referred to as fake moussaka due to the omission of meat and potatoes, this eggplant recipe is a great vegetarian dish that doesn’t compromise on flavour and calls on two kinds of cheese!

4. The crisp and smoky outer

Matthew Evans smokes his eggplant for the baba ganoush by scorching the outside directly on the gas burner and then finishing them off in the oven. Serve with grilled flatbread and lemon wedges as a snack or appetiser.

5. Our kind of love triangle

These Cypriot pastries are traditionally made with flaouna cheese made locally on the island, but this recipe combines haloumi and mint for that a standout filling.

6. A hunk of genius

This sort of one-tray meal allows us to spend more time with each other and still have a delicious and wholesome meal on the table in time for dinner (and little to wash up).

7. How to win friends with salad

The salty haloumi is perfectly foiled by the sweet charry watermelon and the cucumber adds an excellent crunch in what is an all-round refreshing idea! Get this recipe here.
