Chef Carlo Staropoli suggests two cooking ways for this delicious and typical southern Italian recipe.

Ingredients for four serves:

4 medium sized calamari

100 grams of black olives

20 grams of capers

250 grams of bread crumbs

200 grams of ripe cherry tomatoes

2 eggs

50 grams of pecorino cheese


Salt and pepper

A glass of white wine
