In this episode Marie draws on the Kimberley history of station and mission days.  Marie shares with us a family recipe that takes us back to a simpler time, when families pulled together what they had in their pantries to make a feed go a long way. Her Ox Tail Stew is a favourite of many, black and white and we see how she serves it up with a vegie bake with little or no sauces, salt or pepper.

Ingredients

Ox Tail Stew Ingredients 

  • 2-3 Ox Tails
  • 500g-1kg beef mince
  • Water (enough to cover meat)
  • Pumpkin
  • Carrots (Sliced)
  • Celery (sliced)
  • Cabbage (thickly sliced)
  • Potatoes
  • Onion (sliced chunky)
  • 1 packet vegetable soup mix
  • Rice (medium or long grain) or damper

Vegetable Bake Ingredients 

  • Sliced sweet potatoes
  • Pumpkin (Chopped)
  • Cauliflower
  • Broccoli
  • Cream of mushroom soup mix
  • 1 Tub of cream
  • 1 ½ Cups of water

Oven temperatures are for conventional; if using fan-forced (convection), reduce the temperature by 20˚C. | We use Australian tablespoons and cups: 1 teaspoon equals 5 ml; 1 tablespoon equals 20 ml; 1 cup equals 250 ml. | All herbs are fresh (unless specified) and cups are lightly packed. | All vegetables are medium size and peeled, unless specified. | All eggs are 55-60 g, unless specified.

Instructions

To make the ox tail stew, add beef mince to Ox Tail, cover with a fresh lot of water and bring to boil. Once boiling put the lid on and allow to boil for a further 15 mins, again drain water to get rid of any excess fats. Now add the last bit of water to cover the meats then add chopped pumpkin, sliced carrots, sliced celery, thickly sliced cabbage and diced potatoes and onions. Then add in veggie soup mix. Allow to cook. The stew is ready when potatoes are done. Serve with rice.

To make the vegtable bake, peel sweet potatoes, pumpkin and cut cauliflower, broccoli then dice all (chunky). In a good baking/casserole pot add the sweet potatoes (1st vegetable layer), then pumpkin, next layer cauliflower and broccoli. Add a bit of water, to help with the steaming of the veggies now add the Cream of Mushroom soup powder mix until blended. Then pour cream over the top, cover with lid allow to bake on a low heat for 15 – 20 mins.
